BBQ Bob’s Grilled Veggie Pizza



1 fresh dough ball or a Boboli Pizza Crust
Extra Virgin olive oil
1 Vidalia onion sliced in ½” rings
2 Shallots sliced thin
2 garlic cloves sliced paper thin
1 cup fresh basil washed and dried (whole leaves)
1 jalapeno pepper sliced in thin rings (remove seeds)
1 Roma tomato sliced into ¼” slices
1 ½ cups of shredded mozzarella cheese
1 cup of shredded cheddar cheese
10 tsp of ricotta cheese
½ cup of pizza sauce
Sea salt (to taste)
Fresh ground pepper (to taste)



Light Egg and bring up to 500° F or cook on the Tallboy on the second shelf up from the firebox.

If using fresh dough, flour a sheet of wax paper and flour dough ball. Roll out to make a crust roughly 15” diameter.

If using Boboli crust, drink a glass of cold beer or wine during this step.

Lay out your vegetables on a cutting board and sprinkle with salt, pepper and brush with extra virgin olive oil.

Grill veggies direct on Egg until they start to brown and crisp slightly. Use a seafood grate or disposable aluminum grate for the smaller veggies such as shallots and peppers.

Brush olive oil on the top of the crust and shake lightly with salt, pepper and place the thin sliced garlic on the crust.

Spread the shredded cheeses onto the crust and lay out your grilled vegetables.

Place the whole leaves of basil around the pizza.

Use a teaspoon to scoop ricotta cheese onto the pizza randomly.

Dollop pizza sauce onto top of pizza randomly as well.

Dust with salt and pepper one last time and set the pizza directly onto the pre-headed plate setter (if using Boboli), legs down. If using fresh dough, place the pizza on a pizza pan on top of the plate setter.

If using the Tallboy, use a pizza stone on the cooking grate.

At this point you need to take a large sip of beer or wine, you are finally done topping the pizza.

Cook at 500° for about 15 minutes or until there is a combination of brown crust underneath and melted cheese on top.

Let cool slightly, slice and enjoy!

Pair with an ice cold wheat beer or a cool glass of Pinot Grigio.
