| Just wondering to what temp everyone cooks thier brisket. Generally I'm 190 or so. However I was checking out the Guru recipe web page and saw Shotgun Fred takes his to only 180-185 deg. I'm just curious to what most of you do. |

I take it to 165 unwrapped, then I wrap it in foil with a marinade/sauce and take it to 195° F wrapped. Then a 2-3 hour rest if possible.
I don't think Shotgun Wraps his when he uses that method.

Hey Bob...is a marinade or sauce better than plain old apple juice or other simpler liquids? Also...do you use Italian Dressing as the marinade?

Steve, If you do not want to impart much flavor at that point of the cook, use apple juice. I use a strong flavored marinade at this point to add another level of flavor to the brisket. There are many great marinades for beef out there. You can use beer, coke, apple juice or other liquids with some salt, black pepper, red pepper, garlic etc..
I use italian dressing on Chicken
