Though I never use it for the rub (I do use it in sauce), I have heard that mustard is excellent for holding the rub on the meat and is generally very neutral on adding any additional flavor to the meat. Would stand to reason that a strongly flavored mustard could influence it though.

When I did occasionally use mustard on pork, I use Guldens mustard or Beer and Brat Mustard. I think yellow mustard has a bitter flavor when cooked on pork to hold the rub on. It is one of those things I got away from because I do not think it adds anything to the flavor and it is not neccessary to hold on a rub.

| Well I've been trying out the 3 new different flavors from Grey Poupon. I've only tried the heart spicy brown and the savory honey, but i think the Harvest coarse ground would be the best as a rub on meat because it has whole mustard seeds, so theres more texture. I may want to try it out on some salmon...maybe it might go well with the pork. you can look at the flavors on greypoupon.com. If you try it let me know how it turns out. |
